Fried Sea Anemones

Ingredients:

  • 1 pound of sea anemones — recipe also works for baby squid if you can’t find sea anemones.

  • 1/2 lemon

  • Salt

  • Pepper

  • 1 tablespoon of cayenne pepper

  • 1 bowl of all-purpose flour

  • 2-3 eggs

  • 1 bowl of panko breadcrumbs

  • 2-2 1/2 cups of vegetable oil

Instructions:

  • Heat vegetable oil on medium-high heat in medium-sized pan.

  • Prep sea anemones. Wash and dry thoroughly with paper towels.

  • Generously season your sea anemones with salt, pepper, and cayenne. You want to create a bit of a crust for the flour to stick to from the get go. Squeeze the lemon over the sea anemones.

  • Line up your bowls for the frying station. Bowl 1 is your all-purpose flour. Bowl 2 is your egg wash (just beat together the eggs). Bowl 3 is your breadcrumbs. Proceed through bowls 1-3 with the sea anemones.

  • Time to fry! Check that your oil is not too hot. There shouldn’t be a lot of steam rising from the pan, if so, turn down the heat just a bit.

  • Add in your sea anemones. Depending on pan size, fry 4-6 at once.

  • Once the sea anemones turn a golden brown on one side (about 2-3 minutes), flip to the other side and wait for the same golden brown color.

  • Once both sides are golden brown, use tongs to take out the sea anemones and place onto a paper towel to dab the extra oil off.

  • Repeat the process until all sea anemones are fried.

  • Enjoy with sauce of your choosing or by itself with more freshly squeezed lemon juice!
